bean and veg quesadilla

As easy as a ham and cheese toastie, but with WAY more nutrition… this bean and veg quesadilla is the bomb when it comes to quick easy lunch ideas.   The veg packed passata is brimming with nutrients and the beans add plenty of fibre.  When served with our simple guac – what is not to love about this flavour packed, toasted deliciousness?

INGREDIENTS (serves 4)

8 x wholemeal tortilla wraps (or wraps of choice)

1 1/2 cups veg packed passata (or if you’re stuck tomato passata)

1 can mixed beans (or any beans of choice), well rinsed

1 1/2 cups grated cheddar cheese (or cheese of choice)* can also leave cheese off if looking for vegan option. 

2 tsp paprika

2 tsp ground cumin

sea salt & pepper

To serve (optional extras): simple guacamole, chilli flakes (for big people), chopped coriander, dollop of sour cream (or natural yoghurt), chopped tomatoes. 

 

METHOD

To make filling combine passata, mixed beans, and spices in a small sauce pan.  Allow sauce to reduce a little, so it is more thick.  Season with salt & pepper. 

Place one tortilla in a fry pan, on medium heat.  Cover with bean mixture and sprinkle cheese on top.  Add second tortilla as a ‘lid’.  Allow quesadilla to heat through, then flip and allow to brown on the second side. Repeat process until all four quesadillas are made.

Serve as is or add as many or as few optional extras as you like. This is a great snack or can be bullied up with all the extras to form a meal for the fam.  In our books, the more the better, but to keep things simple – you can just serve on their own.
