In most cases, store-bought granola is nasty with a capital ‘N’ – full of sugar, cheap vegetable oils, dried fruit. But, if you do love the health benefits and taste of a good granola, give this Spiced nutty granola, a go! Full of good fats, protein, nurturing spices and a nice serve of complex carbs, plus smelling and tasting like a delicious warm hug… it is definitely ticking all the right boxes.
INGREDIENTS
1 -2 cups nuts: pecans, macadamias, almonds (roughly chopped)
2 cups oats
1 cup coconut (desiccated or shredded)
1/4 cup coconut oil, melted
1/3 cup rice malt syrup (or 3 tablespoons maple syrup / honey)
1 1/2 tablespoons ground cinnamon
2 teaspoons ground nutmeg
1 teaspoons ground ginger
METHOD
- Preheat oven to 150C and line a large baking tray with baking paper.
- Combine dry ingredients together: nuts, oats, and coconut in a large bowl and toss together.
- Mix through coconut oil, rice malt syrup, and spices, until dry ingredients are well coated.
- Spread evenly across your baking tray, then pop into the pre-heated oven.
- Cook for 10 minutes, turn the ingredients gently and cook a further 10 minutes.
- Remove from oven, allow to cool on the tray then transfer to an airtight container.
- Wed re not so good at sitting down a whole bowl of granola however you certainly can!!! You could eat this one as a breakfast ‘cereal’ with milk, Mix through your natural yoghurt with some grated apple or poached fruit, Use as a topper for a quick and easy fruit ‘crumble’, Serve as a healthy fats source with your evening ‘nice cream’, Munch on as it is. Endless ways to enjoy!!
