A really easy SSH way to get more veg into your family’s belly is by serving up a hearty veg-based dip(s) with vegetable crudités and / or some tasty ‘chips’ and this Simple Guacamole with Mexican ‘shapes’ definitely ticks the box.
We use them for morning / afternoon tea. We use homemade dips in that dangerous pre-dinner period when everyone is “starving” – because if they fill up on a homemade veg or legume dip and crudités, so what?!
If we ever go back to packing school lunchboxes, a small container of dip is a brilliant addition.
This is one of our family favorites, because who doesn’t love a bit of Mexican?! As for the ‘Shapes’ – if you crave salty, crunchy things (aka actual chips! 😉) like we do, then this is for you. No nasty vegetable oils. No funny colours, flavours – you are in control of what goes into this one!
🥑 Super Simple Guacamole w ‘Mexican Shapes’
INGREDIENTS
1-2 ripe avocados
1 plump ripe tomato, finely chopped
Juice of 1/2 lemon (or lime)
2 tbsp natural yoghurt (optional)
Sea salt and ground white pepper
Coriander, to garnish
Optional extras
1/2 med zucchini
1/2 cup spinach
METHOD
Add avocados, lemon juice, and yoghurt to a small processor and blend til smooth. If using extras, you can add zucchini and / or spinach now too. Alternatively, you can mash with a fork for a chunkier finish (grate zucchini and finely chop spinach).
Move avocado mix to a bowl, add tomato and stir through. Season with S&P and garnish with fresh coriander.
🌶 Mexican Shapes”
2-3 round wholemeal pita bread (or you could use wholemeal wraps)
2-3 tbsp olive oil
1-2 tsp paprika
1-2 tsp ground cumin
1 tsp white pepper
1 tsp sea salt
METHOD
1. Pre-heat oven to 160 degrees. Roughly chop pita bread into ‘chips’ or small squares. Add all ingredients to bowl and toss well, to combine.
2. Lay ‘chips’ out flat on a baking tray and pop into oven. Bake for around 10 mins. They don’t take long, so keep an eye on things. Once gently browning and crisping up, remove from oven and allow to cool.
3. If still chewy, they might need a bit longer.
4. Serve with super simple guac and crudités or any other homemade dips. They will store in an airtight container but we never have any left over?!?
