A staple and always abundant veggie is both our households in the wonderfully versatile sweet potato – seriously is there nothing a sweet potato can’t do?! We particularly love to bake with SP because not only are you getting all of that veggie goodness in your baked goods (hello hidden veg ;-)), but it adds such a delicious yet subtle punch of sweetness.

This Sweet Potato Bread is a great substitute when you feel like something more than just bread, packed with so much goodness and can be paired with both sweet and savoury toppings…we’ve done both and OMG taste sensations! This nutritious little loaf is also Nut, Sugar and Dairy free so the perfect little snack for the little people, lunch boxes or anyone with said intolerances. Our recipe also uses spelt flour which is not considered gluten free, however is generally better tolerated than regular wheat – winning!

What you will need? (this is for a small loaf, just double the recipe for a large loaf tin)

  • 1 c (pre cooked) sweet potato (can be substituted for pumpkin)
  • 2 large free-range eggs
  • 1/3 cup olive oil
  • 1.5 tsp baking powder
  • Pinch sea salt
  • 3/4 cups wholemeal self raising flour
  • 1/4 cup seed mix (any combo of pumpkin, flax, sunflower, sesame etc)

Method

  1. Preheat oven to 180C
  2. Peel and chop the sweet potato and steam until cooked through
  3. In a mixing bowl, mash the sweet potato with a fork. Add remaining ingredients (aside from seeds) and combine well.
  4. Transfer mixture to a small lined loaf tin, top with seed mix and bake for 30-45 mins (until browned on top and firm to touch).
  5. When cool, slice loaf and store in airtight container. 4-5 days in the fridge or freeze leftover slices.
  6. Some of our favourite toppers: avocado, S&P, lemon: peanut butter + honey: tahini paste + honey: homemade berry jam: good quality butter – options are really endless! 

Top Tip: Toast the bread on the sandwich press first before adding your topper – really enhances the flavour, yummmm!
