Apple and blueberry crumble

When things turn a little cooler, we immediately start to crave more warming foods and this is one delicious addition to our menu! The fruit takes on a gentle caramelised taste and the nutty, crunchy crumble is yum. The nuts, oats and coconut oil - all add important protein, complex carbs and healthy fats to the dish making it an all-round good one.

FILLING
- 6 green apples cored and sliced
- 1/2 cup blueberries
- 1 tbsp rice malt syrup or honey or maple syrup
- 1 tbsp coconut oil
- 1/2 orange juiced
- 1 tsp cinnamon
- 1 tsp vanilla extract or paste
- 1/4 cup water
CRUMBLE
- 1/4 cup macadamias chopped (can use other nuts too)
- 1/3 cup shredded coconut
- 1/2 scoop SSH Vanilla protein powder
- 3 tbsp sesame seeds
- 1 1/2 cup oats
- 3 tbsp coconut oil
- 2 tbsp rice malt syrup
Pre-heat oven to 200 degrees.
Mix all filling ingredients, except blueberries, together in a small saucepan and cook until apples are softened. Then, gently stir through the blueberries.
Transfer the filling to a baking dish.
In a clean bowl, mix all of the crumble ingredients together and once combined, spread across the top of the filling.
Pop the baking dish into the oven and bake until the crumble browns on top (approx 20 mins+).
Keep an eye on this as you don't want it to burn.
This crumble is delicious served with a scoop of 'nice cream' and another sprinkle of cinnamon.
SUBS
You can interchange blueberries for any berries, fresh or frozen.
Serve with a big dollop of natural yoghurt for some added protein.
