Eggs, Hot Smoked Salmon & Veg

A really easy go to with the perfect balance of protein, carbs + fats (and fibre!) is our egg and salmon breakie plate. We actually have this for breakfast, lunch or dinner some days because it's so damn tasty!

Ingredients
  

  • 2 large boiled eggs or fried if you prefer
  • 75 grams hot smoked salmon coles or woolworths brand
  • 1 zucchini chopped
  • 1/2 cup chopped mushrooms
  • 1 cup baby spinach
  • 1/3 cup shelled edamame
  • 1 tbsp feta cheese
  • 1 tsp apple cider vinegar
  • sea salt & pepper to taste

Instructions
 

  • In a pot, boil 2 eggs as preferred (6 minutes for a soft yoke). Pop frozen shelled edamame in hot water for a few minutes. Or fry your eggs if you prefer.
  • At the same time, saute chopped zucchini + mushrooms in a pan over medium heat with a tsp EVOO, until just soft and browned.
  • Remove boiled eggs from pot and place them in cold water for a couple of minutes.
  • Plate cooked zucchini / mushrooms and then remove shell from boiled eggs. Plate up with hot smoked salmon, baby spinach and shelled edamame. Sprinkle over feta and season with S&P.
