Beef & Bean Quesadilla w Crunchy Slaw
This recipe was an absolute hit with EVERYONE in this household. An epic combo of flavours and textures, this is sure to be a winner in yours too.

- 500 gram beef mince lean, free range
- 8 wholewheat/tortilla wrap brand: Mission or Old el Paso OR gluten free alternative
- 1 brown onion finely diced
- 1-2 cloves garlic minced
- 1 medium carrot grated
- 1 can black beans drained and rinsed
- 1 tbsp tomato paste
- 2 tbsp paprika
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 cup cheddar cheese grated
- sea salt & ground white pepper to season
Crunchy Slaw
- 2 cup cabbage red, white or combo or you can use pre-packed slaw from Coles/Woolworths
- 1 red capsicum finely diced
- 2 tbsp light tangy dressing or make your own using our 'sides' recipes
Heat fry pan on medium heat.
Gently fry minced garlic and diced onion. Add beef mince and break up with wooden spoon.
Once meat has started to brown, add carrot. Mix through then add drained and rinsed black beans.
Add in the tomato paste, spices and then season with salt and pepper.
Mix well and then cover, allowing everything to cook through.
Once cooked, remove from pan and set aside. Keep the pan on low heat and give a gentle wipe down, to clean.
To assemble, lay your tortillas one at a time on our pan on very low heat. Add a big scoop or two of beef and bean mix, cover in grated cheese and then add a tortilla ‘lid’.
Cook for a few minutes, until cheese starts to melt, then flip the tortilla and repeat on second side.
Repeat process until all quesadillas are cooked.
Slaw
In a bowl, add your cabbage (or your pre-packed coleslaw mix) and red capsicum. Stir through the dressing until well combined.
Cut your quesadillas into quarters and and serve with slaw on the side.
