Chicken & Hummus Wholewheat Wrap

Here is a combo of flavours you never knew you needed - the humble chicken and hummus wrap with fresh crispy salad is a lunchtime feast you'll be eating for life!

- 250 grams chicken breast poached & shredded
- 2 wholewheat wrap brand: Mission or Old el Paso
- 2 tbsp hummus store-bought, homemade or mashed chickpeas
- 1 tbsp natural yoghurt
- 1 cucumber sliced
- 1 red capsicum sliced
- 1 tomato sliced
- 1/2 avocado
- 1 cup mixed fresh greens lettuce, spinach, etc.
- 1 tsp sea salt & pepper
Poach the chicken breast(s) for approx. 10-12 minutes on low heat (until juiced run clear). Once cooked and cooled, shred chicken with a fork. (Great idea to pre-prep your poached chicken as it will last in the fridge for up to 4 days).This recipe is for 2 serves, so keep ingredients in the fridge and enjoy for lunch 2 days running. Lay out the 2 wraps on a clean surface. Spread a generous layer of hummus over each tortilla.
Mix shredded chicken and yoghurt together.
Place chicken & yoghurt mix, cucumber, capsicum, tomatoes, avocado and mixed greens on top of the hummus.
Season with salt and pepper.
Roll up the wraps, tucking in the sides as you go. Slice in half, if desired.
Serve and eat immediately.
