A super simple lunch idea that is balanced and easy peasy to prep. If you’re always on the go and struggle with getting lunch in, then this recipe is for you.
1wholewheat wrapbrand: Mission, Old el Paso or Helgas
150gchicken breastcooked and shredded
1tspwhole egg mayo
1/4avocadosliced
½tomato sliced
⅓cucumber sliced
¼cupcarrotgrated
1cupmixed fresh greens
sea salt & pepper to taste
Instructions
Pop your wrap on a plate and spread the avocado and mayo on there.
Assuming you have pre-cooked the chicken, add the pre-cooked and sliced/shredded chicken and then the remaining salad ingredients. If you need to cook your chicken, slice the chicken first and allow approx. 10 minutes of cooking time on a small fry pan.
Season with salt and pepper.
Roll your wrap up and cut it in half - and enjoy!

Note. You can prep this lunch to get your through a few days. Pre-slice all your salads and store them cut up in a containers in the fridge. Likewise, you can pre-portion your chicken out.
