Chicken & Vege Patties w Green Mixed Salad

These are a real family favourite in our households. Delicious flavour from the herbs and the chicken version offers a yummy alternative to regular beef or even tuna patties. These are great served with a crunchy salad (for even more nutrients!) or on a burger with salad (for those burger lovers out there!). These are also brilliant in the school lunch box the following day

- 500 grams chicken mince
- 1 carrot grated
- 1 zucchini grated
- 1-2 tbsp plain flour or gluten free use almond meal/ or 1 tbsp coconut flour
- 1/2 cup fresh mixed herbs finely chopped (or 1-2 tsp dried herbs - we used Italian mixed herbs)
- 2 tbsp olive oil mild, extra virgin
- sea salt & pepper to taste
Green Mixed Salad
- 350 grams mixed fresh greens pre-packed bag Coles/Woolworths
- 150 grams kale slaw kit pre-packed Coles/Woolworth
- 1 cucumber diced
- 1/2 avocado diced
- 1 punnet cherry tomatoes chopped
- 100 grams Feta cheese or use halloumi if preferred
- 2 tbsp olive oil mild, extra virgin
- 2 tbsp lemon juice
- sea salt & pepper to taste
In a large bowl, combine all chicken & vege pattie ingredients (aside from olive oil) and mix well to combine.
Add olive oil to a moderately heated fry pan.
Add 1 heaped tablespoon of pattie mixture into frypan and cook 3-5 mins each side.
Repeat until all mixture is cooked.
Combine all green salad ingredients, mix well with olive oil, lemon juice and salt & pepper.
Serve immediately and watch it all disappear!

Sub your fresh herbs with a dried Italian herb mix.
BATCH
These can also be frozen, so why not double the batch and freeze half for a day when you don't have time to cook!
Just allow to cool first, then put it an airtight container in freezer for up to 2 months.
