Egg & Avo Mash with Cottage Cheese

This is an easy and seriously delicious and satisfying snack. Great combo of flavours and a nice hit of protein!

- 1/4 avocado
- 1 egg boiled
- 1/2 tomato finely diced
- 1/8 red onion finely diced
- 1 squeeze lemon juice
- sea salt & pepper to season
- 2 rice cakes
- 2 tbsp cottage cheese
Boil you egg to your liking (6 minutes for soft boiled) and once ready, peel then roughly mash through with avocado, finely diced tomato, red onion, lemon juice, S&P.
Spread cottage cheese over rice cakes and add egg, avo mash on top. Season with more S&P or chili flakes as desired. Enjoy!
