- 400 g tin chickpeas drained and rinsed
- 1/4 cup peanut butter 100%
- 2 tbsp tahini
- 2 tbsp coconut flour
- 1/4 cup maple syrup
- 2 tbsp coconut oil
- 1 tsp baking powder
- 1 tsp vanilla
- 1/4 cup cacao nibs or dark chocolate, chopped
Preheat oven to 180 degrees. Line a baking tray with baking paper.
Place all ingredients, except cacao nibs, in a food processor and blitz well.
Ensure mixture is well combined and is pretty smooth, although you still want it quite thick in consistency.
Remove from the food processor and stir through the cacao nibs.
Using a spoon, scoop out the dough and place onto baking tray.
Press down gently with the back of a fork to flatten slightly. Repeat until you have used up all of the dough.
Place the baking tray in the pre-heated oven and bake for 35 mins or until the edges of the cookies look darker.
Once cooked, remove from the oven and let them cool.
Once cooled, drizzle with a little peanut butter or melted dark chocolate.
And there you go! A delish, nutritious, sweet snack for you and your bubs.
No one will know just how good these ones are for them! Anna & Em xo
SUBS
If you wanted to make this one lunch-box ready, you can sub out the Peanut Butter for extra tahini. This creates a slightly different taste so you may want to add a little more sweetener (like 1 tbsp extra maple syrup).
