Simple Protein Pancakes

These quick protein pancakes are an absolute staple in our households. They are delicious, easy to whip up and full of protein - which keeps the hungry hordes satisfied! We use our SSH Protein Power in this recipe because it is all natural and plant based and suitable for the entire family.

- 1 scoop SSH Protein Powder vanilla or chocolate flavour
- 2 tbsp butter or ghee, coconut oil, olive oil
- 1 cup milk of choice
- 2 eggs
- 1 cup plain flour we love spelt - have also subbed w oat flour or GF flour
- 2 tsp baking powder
Mix the dry ingredients in a bowl.
In a separate bowl whisk the eggs and milk together, then add to dry ingredients and mix well. Add more liquid if necessary, to achieve desired thickness.
Heat pan to medium heat and add butter (or alternative) to cover bottom of pan.
Once butter is bubbling, add in spoonful of batter to make pancakes, of desired size.
Allow to cook until bubbles appear on top, then flip. Second side will cook quicker than first side. Remove from fry pan once, both sides are brown.
Continue until you have used all batter.
Serve pancakes with butter, honey, maple syrup, yogurt, berries - choose your own adventure!
Optional add ins for mixture include: mashed banana, berries, choc chips, grated apple/ pear... the options are endless.
