Pasta for lunch? Yes please! This light and delicious pasta salad with high protein tin tuna is a winner and ticks all the boxes.

- 400 g tin tuna tinned and drained
- 1 cup pasta of choice
- 1/2 cup cherry tomatoes chopped
- 1 red capsicum chopped
- 1 cucumber chopped
- 1 cup olives halved
- 1 cup rocket chopped
- 1 tbsp fresh basil finely chopped
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil extra virgin
- sea salt & pepper to season
If not pre-cooked, cook your pasta according to packet instructions and sit aside to cool.
In a larger bowl combine tuna, basil, all salad ingredients, including olives and your cooked pasta.
Toss to combine and dress salad with balsamic vinegar and olive oil.
Season with salt & pepper as desired.

You can use any low starch vegetable that you might have - that might include: capsicum, snow peas, zucchini (grated), carrot, cabbage.
You can also use whatever leafy green you have on hand, if you don't have baby spinach.
