“McChicken” chicken strip wraps

“McChicken” Chicken Strip Wraps
Ok, if you've ever loved a McChicken burger – then you are going to LOVE this one! And if you've never had the pleasure – you are still going to love this one. The biggest bonus is that this tastes delish, and is super healthy, high protein, low GI and packed with good fats. For top shelf, you want to invest in a good mayo – we love Gevity mayo and Good Fat Mayo (both available now at Woolies). We've cooked ours in the oven, but you could also do this one in the air fryer, if you had one.
Ingredients
- 500 g chicken breast
- 3 eggs beaten
- 1/3 cup plain flour of choice
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 1 tbsp oregano dried
- 1 tsp sea salt
- 1/2 tsp pepper ground
- 2 tbsp olive oil mild, extra virgin
- 2 cup red cabbage finely sliced
- 2 tbsp red wine vinegar
- 1 tbsp olive oil mild, extra virgin (for dressing)
- 1 clove garlic minced
- 4 wholewheat wrap brand: Mission or Old el Paso OR gluten free alternative
- 2 tbsp whole egg mayo
- 2 tbsp pickles chopped
Instructions
- Pre heat oven to 180 degrees C.
- Mix all dry ingredients together (flour, garlic & onion powder, oregano, s & p).
- Beat eggs together in a bowl and then dip the chicken pieces, one by one in to the egg mixture.
- Once covered in egg mixture, coat each piece of chicken in dry spice / flour mix and set them aside on a clean plate.
- Drizzle olive oil onto an oven tray and heat the tray in the oven. Then when hot, lay chicken strips on tray evenly and bake for 10 mins.
- While chicken cooks, combine cabbage, red wine vinegar, olive oil and garlic. Season with more sea salt and pepper if desired.
- After 10 mins, flip chicken over and if necessary, brown up the second side with the grill setting. Keep an eye on it, as you don't want to dry the chicken out.
- Serve on a wrap by layering with mayo, cabbage salad, pickles and the crispy chicken!
- Enjoy.
Notes
