Slow Cooked Chilli + Fennel Beef Cheeks
Get out the slow cooker and with minimal prep, you are going to have yourself a moreish, deliciously flavoursome, slow cooked beef the whole family with love!
Ingredients
- 2 brown onion roughly chopped
- 3 garlic cloves skinned
- 1 red chilli chopped, seeds optional
- 1 large fennel bulb top removed and cut into thin wedges
- 4 sprigs fresh rosemary
- 1 kg beef cheeks
- 1 tsp beef stock powder
- 2 bay leaves
- ½ cup balsamic glaze
- 1 cup red wine
- 1 can whole tin tomatoes
- 1 cup water
- sea salt and pepper
- 4 large white potatoes
- 1 tbsp butter
Instructions
- Pop your slow cooker on high and let it heat up.
- Add all of the ingredients to the slow cooker except the beef cheeks, potaotes and butter. Once you have given the ingredients a bit of a mix about, sit the beef cheeks on top, season with salt and pepper and pop the lid on. Check the dish every few hours, you can turn the cheeks about in the liquid if need be and top up the liquid with additional water if need be. Personally I didn’t need to do this, but if you were using a higher volume of meat you may need to.
- I highly recommend letting this cook for an absolute minimum of 8 hours, more if you can.
- Once the cheeks are literally falling apart or they look like they want to remove drop your slow cooker down to the warm mode while you make your mash.
- Chop up your potatoes and place these in a sauce pan full of water and boil them until you can easily pop a fork through a bit of potato. Drain the water out , then add in the tbsp butter and mash this with the potato. Season with salt and pepper. You can pop this in a bowl and cover it with glad wrap to re-heat it to serve if you like.
- Serve up on each plate some mash and the beef cheeks. Be sure to drizzle over some of that yummy sauce goodness left over in the slow cooker.
Notes
This recipe is GREAT the next day , so if you’re only feeding a smaller tribe, make sure you take the left overs for lunch!
