rice noodles
cooked according to instructions

Lebanese cucumber
diced

edamame
shelled

Instructions
Pre heat oven to 180 degrees C. Line a baking tray with baking paper.
Add all meatball ingredients to a bowl and mix well to combine.
Use tablespoon to scoop out 'meatballs' and place on tray. Pop into pre heated oven and cook for 10-15 mins.
Remove from oven and set to the side.
Place all dressing ingredients in a glass jar and shake to combine. Set aside.
Place all salad ingredients in a bowl and combine. Dress the salad ingredients with pre mixed dressing and combine well.
Top with meatballs and serve. Optional toppings include fresh coriander, fresh chili and sesame seeds.
