
Chicken Meatball & Rice Noodle Salad

Ingredients
CHICKEN MEATBALLS
- 900 g chicken mince
- 1 egg
- 1 tbsp breadcrumbs or almond meal
- 1/4 cup coriander chopped, leaves and stems
- 1 garlic minced
- 1 carrot grated
DRESSING
- 1 tbsp fish sauce
- 2 tbsp lime juice freshly squeezed
- 1 tbsp soy sauce or tamari
- 1 tsp ginger finely grated
- 1 tbsp olive oil
SALAD
- 100 g rice noodles cooked according to instructions
- 2 Lebanese cucumber diced
- 1 cup edamame shelled
- 5 radish finely sliced
- 200 g cherry tomatoes quartered
- 2 cup baby spinach
- 1 tbsp sesame seeds
Instructions
- Pre heat oven to 180 degrees C. Line a baking tray with baking paper.
- Add all meatball ingredients to a bowl and mix well to combine.
- Use tablespoon to scoop out 'meatballs' and place on tray. Pop into pre heated oven and cook for 10-15 mins.
- Remove from oven and set to the side.
- Place all dressing ingredients in a glass jar and shake to combine. Set aside.
- Place all salad ingredients in a bowl and combine. Dress the salad ingredients with pre mixed dressing and combine well.
- Top with meatballs and serve. Optional toppings include fresh coriander, fresh chili and sesame seeds.
