Four ingredient Peanut Butter Fudge

Guilt free fudge Easy, easy, easy one this one and tastes absolutely delicious. The optional extras add some crunch to the fudge - so if you prefer a little crunch, get creative and add in your favourites - otherwise leave it smooth and silky. Both options YUM!

- 2 tbsp coconut oil
- 2 tbsp rice malt syrup
- 3-4 tbsp peanut butter
- 1 tsp vanilla extract powder or vanilla bean
- 1 tbsp cacao nibs or pecans/ coconut chips (optional)
In a small saucepan, add first three ingredients - simmer on low heat until well combined and gently bubbling.
Turn heat off and add in vanilla.
Stir through to combine.
Add any optional extras (or not) and allow to cool.
Pour into a baking paper lined container (of any shape or size) and pop into the freezer to set.
Wait (patiently), then that's it!! Enjoy.
WARNING: very addictive. We challenge you not to eat all of your fudge at once ;-).
You can top this one with whatever your heart desires!
SUBS
You can use tahini to keep this nut-free. Add a small pinch of sea salt.
While this wholefood snack is a much better option than store bought, please enjoy in moderation and try and keep it at just one serve ;-) (if you can!).
