3 Egg Pesto-herbed Omelet
This is a super easy, healthy recipe that is suited to any meal time! If you’re looking for meat free dinner option or simply a lighter dinner option, feel free to change things up and have this breakfast fave for any of your main meals.
Ingredients
- 3 eggs large
- 1 tbsp fresh parsley finely chopped
- 1 tbsp coriander finely chopped
- 1 tbsp basil pesto of choice (see our 'sides' recipes to make your own)
- 1 tsp olive oil
- ¼ cup milk or milk alternative
- 1 clove minced garlic
- ¼ avocado
- 1 slice sourdough
- fresh chili chopped – optional
Instructions
- Whisk together Eggs, milk, herbs, pesto and garlic in a bowl.
- Heat your nonstick fry pan up and get it hot. Add the olive oil, and swirl this around the bottom of the pan.
- Pour in your Egg Mixture, and lift the pan to move the egg around so that it is evenly distributed
- Allow the egg to cook through, once done, use a spatula to lift it away from the pan and see if you can flip it to cook the other side. Then roll the omelte.
- Serve your omlette with a piece of toasted sourdough and the avocado.
- Season with salt and pepper and add the fresh chopped chili if you’re game!
