Apple, Carrot + Oat Protein Muffins

Ingredients
  

  • 3 eggs
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 ¼ cup milk of choice
  • 1 1/2 cup whole rolled oats
  • 4 scoops SSH Vanilla Protein Powder
  • 1 tsp baking powder
  • 1 ½ tsp cinnamon
  • ¼ tsp sea salt
  • 1 medium green apple grated
  • 1 medium carrot peeled and grated

Instructions
 

  • Preheat the oven to 180 degrees C
  • Line muffin tin cups cupcake liners (or lightly coat with some mild flavoured oil) and set aside.
  • In a large mixing bowl, beat the eggs with maple syrup, vanilla extract and milk until well combined. Add the oats, protein powder, baking powder, cinnamon, and salt and stir to combine.
  • Stir grated apple & carrot into the batter.
  • Evenly distribute the mixture between muffin cups.
  • Bake for 25 minutes, or until the tops of the muffins are lightly golden brown and firm.
  • Remove from the oven and allow to cool in the pan, then transfer to a wire rack to finish cooling.
