Apple, Carrot + Oat Protein Muffins
A delicious and satisfying snack for those days when you want something sweet without the blood sugar spike.
Ingredients
- 3 eggs
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- 1 ¼ cup milk of choice
- 1 1/2 cup whole rolled oats
- 4 scoops SSH Vanilla Protein Powder
- 1 tsp baking powder
- 1 ½ tsp cinnamon
- ¼ tsp sea salt
- 1 medium green apple grated
- 1 medium carrot peeled and grated
Instructions
- Preheat the oven to 180 degrees C
- Line muffin tin cups cupcake liners (or lightly coat with some mild flavoured oil) and set aside.
- In a large mixing bowl, beat the eggs with maple syrup, vanilla extract and milk until well combined. Add the oats, protein powder, baking powder, cinnamon, and salt and stir to combine.
- Stir grated apple & carrot into the batter.
- Evenly distribute the mixture between muffin cups.
- Bake for 25 minutes, or until the tops of the muffins are lightly golden brown and firm.
- Remove from the oven and allow to cool in the pan, then transfer to a wire rack to finish cooling.
