Baked Salmon with Honey Pumpkin
Salmon with Honey Pumpkin
This recipes if packed full of Omega 3 goodness! Salmon is such a beautiful fish, so if you’re new to cooking it, oven baking is an easy introduction for you.
Ingredients
- 500 grams salmon fillets [125g each fillet]
- ¼ pumpkin cut into 4 x wedges
- 4 cups rocket
- 4 tbsp honey
- 1 tbsp pumpkin seeds
- 60 mls olive oil
- sea salt and pepper
- 1 lemon cut into wedges
- 2 cups cooked brown rice already cooked
Instructions
- Preheat you oven to 180 degrees Celsius.
- In a mixing bowl , pop the pumpkin wedges and coat them in olive oil and then drizzle some honey over the top. Please them On a lined baking tray evenly spread out. Season the pumpkin with salt and pepper and sprinkle over the seeds.
- Pop the pumpkin in the oven and bake for about 40mins or until the pumpkin is roasted and has caramelised with the honey. {NOTE – you will pop the salmon in at the 25 minute mark}
- On a separately lined baking tray, place the 4 pieces of salmon and season with salt and pepper. Spray the salmon with olive oil spray, this will help keep the salmon moist in the cooking process. Cover this tray with foil.
- Once the pumpkin has about 15 mins left of cooking time – place the salmon in oven, it will typically take about 15 mins to cook.
- Pop your rice into the microwave to heat it up and then pop ½ cup rice on each plate.
- Once the Salmon and pumpkin are cooked remove them from the oven. Serve each Plate with a piece of salmon and some pumpkin. Then add to each plate a handful of Rocket and a lemon wedge.

BATCH
Batch cooking Rice at the start of you week makes so many meals easier. If cooking dinner for 2 people, this makes an excellent lunch meal the following day.
