Breakfast Mince

Savoury Breakfast Mince
Sick of eggs for breakfast but know you need to get your protein, first up? Then this savoury mince is for you! We love having a container of this in the fridge as it is a brilliant stomach filler for your kids too, when they are "starving!". And it's obviously not just a breakfast option- great for lunch or easy dinner too.
Ingredients
- 500 g mince beef
- 1 clove garlic minced
- 1 tbsp curry powder
- 1 tbsp olive oil
- 1 carrot grated
- 1 zucchini grated
- sea salt and pepper
TO SERVE
- 1 avocado
- 4 piece sourdough
- 2 cup baby spinach or other leafy greens
- 1 lemon juiced
Instructions
- Heat fry pan to medium heat.
- Add olive oil and garlic and pan fry to soften.
- Add mince beef and cook til browned.
- Add grated vegetables and combine well.
- Season with curry poewder and season with S&P.
- Serve with buttered sour dough, 1/4 avocado each and some leafy greens, drizzled with lemon juice.
