Chicken Fajitas
This is super easy dinner fave! Its really tasty, and lower in carbs – so if you’re feeling like a lighter dinner option thats tasty AF, this is for you!
Ingredients
- 600 g chicken thigh
- 1 red capsicum
- 1 brown onion medium
- 1 tbsp olive oil
- 1 Mingle Seasoning Taco Mix
- 4 wholewheat wrap large
- 2 tomato sliced
- 200 g mixed fresh greens
- 4 tbsp natural yoghurt
- 4 tbsp sweet chilli sauce
- ½ cup fresh coriander
Instructions
- Slice up your chicken thighs into thin strips and place in a mixing bowl. Deseed your capsicum and slice this into strips and add the same bowl. Dice your onion and add that to the same bowl.
- Add the olive oil and Mingle seasoning to your chicken mix bowl and with a pair of tongs, mix everything together so that the seasoning covers everything evenly. Set aside.
- Get your ingredients ready for the rest of the wraps. Set your wraps out on 4 x plates {if 4 people are eating} and on each wrap pop a spread of natural yogurt and sweet chilli sauce. Then layer some tomato and lettuce across them as well.
- In a non stick pan pan, cook up your chicken mix. Once everything is browning, you can pop a lid on this to speed up the cooking process, but make sure you’re lifting the lid regularly to turn the chicken. Once everything is cooked , turn the heat off.
- Using tongs, pop some cooked chicken , capsicum and onion on each wrap. Season with salt and pepper and sprinkle over the coriander.
- Wrap your wraps up like a burrito and feast!
Notes
If you want to double the chicken mixture, this is great as a lunch option as well. So cook a double batch and repeat this for lunch the following day.
