Chicken + Hummus wholewheat wrap
Chicken & Hummus Wholewheat Wrap
Here is a combo of flavours you never knew you needed – the humble chicken and hummus wrap with fresh crispy salad is a lunchtime feast you'll be eating for life!
Ingredients
- 250 grams chicken breast poached & shredded
- 2 wholewheat wrap brand: Mission or Old el Paso
- 2 tbsp hummus store-bought, homemade or mashed chickpeas
- 1 tbsp natural yoghurt
- 1 cucumber sliced
- 1 red capsicum sliced
- 1 tomato sliced
- 1/2 avocado
- 1 cup mixed fresh greens lettuce, spinach, etc.
- 1 tsp sea salt & pepper
Instructions
- Poach the chicken breast(s) for approx. 10-12 minutes on low heat (until juiced run clear). Once cooked and cooled, shred chicken with a fork. (Great idea to pre-prep your poached chicken as it will last in the fridge for up to 4 days).This recipe is for 2 serves, so keep ingredients in the fridge and enjoy for lunch 2 days running.
- Lay out the 2 wraps on a clean surface. Spread a generous layer of hummus over each tortilla.
- Mix shredded chicken and yoghurt together.
- Place chicken & yoghurt mix, cucumber, capsicum, tomatoes, avocado and mixed greens on top of the hummus.
- Season with salt and pepper.
- Roll up the wraps, tucking in the sides as you go. Slice in half, if desired.
- Serve and eat immediately.

We love a Roma tomato here, but choice is yours!
