Choc Coco-Nutty Granola

This is one of our most popular recipes and is a non-negotiable staple in our households. We eat this for breakfast, snack time, afternoon tea, after dinner or any time that we have a hankering for something a little sweet… this is a sweet treat that you can enjoy knowing that these ingredients are doing you good, while tasting ah-mazing! Come on…you know you want to 😉
If you want to make this a proper high protein breakie, serve with Greek Yogurt and some protein powder.

Ingredients
  

  • 2-3 cups coconut chips
  • 1 cup shredded coconut
  • 1 1/2 cups mixed nuts and seeds, chopped (use your favourite combo – ours is pecan, almonds, pepitas and sunflower seeds!)
  • 2 tbsp chia seeds
  • 2 tbsp sesame seeds
  • 1/2 cup melted coconut oil
  • 3 tbsp rice malt syrup
  • 3-4 tbsp cacao powder (optional)

Instructions
 

  • Combine ingredients well and spread evenly onto a baking tray.
  • Continue to stir regularly during cooking time.
  • Bake for 10-15 mins in a low oven (140 degrees) until golden. Keep an eye on it as it can burn quickly (trust us on this one!).
  • Allow to cool. Once cooled, you can add any extras that you like – we love goji berries and cacao nibs… but the world is your oyster here!

Notes

Store in the fridge and serve 2-3 tbsp at a time, as a topper to natural yoghurt or munch on its own! For a complete breakfast, add a green smoothie and you have covered off all your nutritional bases – enjoy! xx
