
Coconut & Banana Blender Pancakes
Anna + EmWe are continually for quick, easy, healthy kids' snacks. Â These little beauties are delicious and are sure to be a winner in your household too. Â The bonus is that these little cakes of goodness are so much better for you than your average pancake. Â The coconut oil offers some good fats for you, the 4 eggs gives a great protein content, the oats offer you great complex carbs and the cinnamon helps stabilise blood sugars… win-win-win! Â

Ingredients
- 2 ripe banana
- 4 eggs
- 2 tbsp rice malt syrup honey or maple syrup
- 1/2 cup milk of choice
- 1/2 cup coconut flour
- 1 cup whole rolled oats
- 1-2 tsp cinnamon
- 2 tbsp baking powder
Instructions
- Pop all ingredients into a blender and blend until smooth.
- Heat some butter or coconut oil in a fry pan. Â Once warmed add batter in whatever shape / size takes your fancy!
- Small bubbles will appear in batter (approx. 2 mins), flip the pancakes and cook for a further 1-2 mins (depending on thickness). Â Continue until all batter has been used.
- Eat immediately with butter, a drizzle of rice malt syrup, sliced bananas, peanut butter, cacao chips, sprinkle of cinnamon, coconut chips, sprinkle of chia seeds, chia raspberry jam – the options are endless!!
- If you want to keep for lunch boxes – allow pancakes to totally cool on a wire rack and then store in an airtight container in the fridge for up to 3 days.
