Easy Quinoa & Red Lentil Wraps (GF)
This is an easy recipe for delicious gluten free, homemade wraps – if you're so inclined to MYO! We make up one batch at a time which does us for at least lunch each week day. They are nutritious, protein packed and contain zero nasties! This recipe is adapted from a viral recipe we found by the clever ladies @plantbaes.
Ingredients
- ¾ cup dried red lentils
- ¼ cup quinoa uncooked
- 1 cup water
- 1 tsp sea salt
- 1 tsp olive oil
Instructions
- Rinse the red lentils and quinoa thoroughly until the water runs clear. This is an important step, as quinoa can otherwise be quite bitter.
- Soak in a large bowl of water for 2 hours minimum to 7 hours (recommended). Drain, and rinse again.
- Pop quinoa and lentils in a high speed blender and blitz with 1 cup of fresh water and salt (or spices of choice) until perfectly smooth.
- Heat up a non-stick pan on medium heat and add ¼ tsp of oil or butter if using. Pour the batter and flatten it with the back of a spoon or ladle (to make it like a super thin pancake!).
- Cook for 2 minutes until the top side of the wrap looks dry. Lift slightly to check that the underside appears to have cooked properly, and make sure there are no sticky points, by gently moving the wrap with the spatula. Then flip, cooking for another 2 minutes until golden brown.
- Repeat with the rest of the batter, add your favourite toppings, and enjoy! This recipe makes 6-8 medium to large sized wraps.
