Egg & Avo Mash with Cottage Cheese

This is an easy and seriously delicious and satisfying snack. Great combo of flavours and a nice hit of protein!

Ingredients
  

  • 1/4 avocado
  • 1 egg boiled
  • 1/2 tomato finely diced
  • 1/8 red onion finely diced
  • 1 squeeze lemon juice
  • sea salt & pepper to season
  • 2 rice cakes
  • 2 tbsp cottage cheese

Instructions
 

  • Boil you egg to your liking (6 minutes for soft boiled) and once ready, peel then roughly mash through with avocado, finely diced tomato, red onion, lemon juice, S&P.
  • Spread cottage cheese over rice cakes and add egg, avo mash on top. Season with more S&P or chili flakes as desired. Enjoy!
