Egg & Avo Mash with Cottage Cheese
This is an easy and seriously delicious and satisfying snack. Great combo of flavours and a nice hit of protein!
Ingredients
- 1/4 avocado
- 1 egg boiled
- 1/2 tomato finely diced
- 1/8 red onion finely diced
- 1 squeeze lemon juice
- sea salt & pepper to season
- 2 rice cakes
- 2 tbsp cottage cheese
Instructions
- Boil you egg to your liking (6 minutes for soft boiled) and once ready, peel then roughly mash through with avocado, finely diced tomato, red onion, lemon juice, S&P.
- Spread cottage cheese over rice cakes and add egg, avo mash on top. Season with more S&P or chili flakes as desired. Enjoy!
