Eggs, Avo + Salmon on Sourdough
This epic feast is coming in with over 30g protein, so is an excellent start to your day!
Ingredients
- 2 eggs
- 1/4 avocado
- 50 grams smoked salmon i.e. 2-3 slices
- 1 slice sourdough or gluten free alternative
- 1 cup baby spinach leaves (or mixed greens)
- sea salt & pepper to season
Instructions
- Cook eggs to your liking (poached, scrambled, fried or boiled).
- Spread avocado on your toasted sourdough.
- Top with eggs, smoked salmon, a squeeze of lemon juice, sea salt & pepper.
- Enjoy with a handful of baby spinach or mixed greens on the side.
Notes
Salmon can be substituted with any other fish / meat. Organic sausages or meatballs are delish with this too.
