Eggs, Avo + Salmon on Sourdough

Ingredients
  

  • 2 eggs
  • 1/4 avocado
  • 50 grams smoked salmon i.e. 2-3 slices
  • 1 slice sourdough or gluten free alternative
  • 1 cup baby spinach leaves (or mixed greens)
  • sea salt & pepper to season

Instructions
 

  • Cook eggs to your liking (poached, scrambled, fried or boiled).
  • Spread avocado on your toasted sourdough.
  • Top with eggs, smoked salmon, a squeeze of lemon juice, sea salt & pepper.
  • Enjoy with a handful of baby spinach or mixed greens on the side.

Notes

Salmon can be substituted with any other fish / meat. Organic sausages or meatballs are delish with this too.
