If you are after a little extra in your regular scrambled eggs, then cottage cheese is your gal! Adding a yummy flavour and melted cheesy texture, this will take your scramble to the next level taste wise and adds an extra bump of protein too! Enjoy xx

Ingredients
  

  • 2 eggs
  • 1/4 cup cottage cheese
  • sea salt + pepper
  • 1 tsp olive oil or ghee/butter
  • 1 slice sourdough
  • 1 cup rocket or other fresh greens
  • apple cider vinegar
  • sea salt & pepper

Instructions
 

  • In a medium bowl, whisk the eggs, cottage cheese, salt & pepper to taste, with a fork.
  • Heat a medium nonstick pan over medium-low heat and add olive oil. When warm, pour in the egg mixture
  • Using a spatula, slowly scrape sections of eggs to the center of the pan as the bottom starts to set, creating soft folds for about 1 1/2 to 2 minutes total until just set.
  • Remove from the heat and serve with fresh greens of choice and add a splash of apple cider vinegar on your greens. Season with salt and pepper as desired.

Notes

SUBS
You can sub the cottage cheese with any other cheese of choice, just being mindful that not all cheese contain the same amount of protein. 
Feel free to add any herbs you wish to pimp up your scramble!
