lamb meatballs w minted yogurt

Lamb Meatballs w Minted Yoghurt + Greek Salad
This is a real crowd pleaser for big and little people alike. This recipe will feed 4 people, but if you have older children or bigger eaters, you may need to double the recipe. Or, just double the batch and save the second half in the freezer for next time… batch cooking at its best!
Ingredients
- 500 grams lamb mince
- 1 tsp ground coriander ground
- 1 tsp cumin ground
- 1 tsp paprika
- 1 eggs
- 2 tbsp GF breadcrumbs or 1 tbsp psyllium husks for gluten free
- 1 carrot grated
- 1 zucchini grated
- sea salt & pepper to taste
Minted Yogurt Dressing
- 1 handful mint leaves finely chopped
- 1/2 cup natural yogurt
- 1 tbsp lemon juice
- sea salt & pepper to taste
Easy Greek Salad
- 300 gram mixed fresh greens pre-packed bag from Coles/Woolworths
- 250 gram cherry tomatoes punnet
- 2 cucumber diced
- 1 red onion small – diced
- 1 cup fresh parsley chopped
- 1/2 cup kalamata olives pitted and sliced
- 100 grams feta cheese danish or regular
- 1/2 lemon juiced
Instructions
- Preheat oven to 180 degrees.
- Combine all meatball ingredients (lamb, prices, grated veggies, eggs + breadcrumbs) in a large bowl (you might need to get your hands into this one!) and then season with salt & pepper.
- Use a tablespoon and scoop out mince and roll into small balls.
- Place balls on a baking paper lined tray and pop into the oven for 8-12 minutes, until meatballs are cooked through.
- In a separate bowl, combine all yoghurt ingredients.
- Combine all green salad ingredients in another bowl and mix well.
- Serve meatballs with a scoop of minted yoghurt and your greek salad on the side. They also work well in a wrap.
