Mediterranean Chicken Tray Bake
We love a one tray, one pan recipe – usually they are a set and forget kind of recipe and the bonus is that there is very little washing up! This one develops some deep delicious flavours and cooking with a cut of chicken that has the bone in, helps avoid the chicken drying out – the meat comes out tender and moist. It will however take a little longer to cook than a breast or thigh. Simply stick a skewer into the thickest part of the drumstick, towards the bone and press gently til the juice runs out. If it is still a little pink – it needs more time. Clear juice means it is done. Let us know if you try this one and what you and your tribe thinks?
Ingredients
- 4 chicken drumsticks or can use chicken breast
- 500 g potatoes cut into small cubes
- 250 g punnet cherry tomatoes
- 1 red onion diced
- 2 tbsp olive oil
- 1/2 cup Juice of 1 lemon
- 1 cup vegetable / chicken stock
- 2 tbsp paprika
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp Sea salt
- 1 tsp pepper
Instructions
Method
- Pre heat oven to 180 degrees.
- In an oven proof dish, drizzle 1 tbsp olive oil, add onion and garlic. Pop potatoes into dish and then sit chicken pieces on top. Place cherry tomatoes in spaces in between.
- Drizzle remaining olive oil over top.
- Sprinkle spices evenly on top and mix to combine if necessary. Season with salt and pepper.
- Pop into pre heated oven and bake until chicken and potatoes are cooked through. Marylands will take 50-60 mins. Drumsticks 30-40mins and chicken breasts 20-30 mins. If you par boil potatoes beforehand, they’ll be quicker too.
Notes
Just an idea, but once cooked, you could sprinkle with a little feta cheese ????
Serve with crunchy green salad. Yummmm!!!
