Mexi Spiced Chicken w Rainbow Slaw

Super tasty, fresh and crunchy – a great mix of flavours, this dish is a quick an easy lunch or dinner. If you wanted to bulk it up a little add a slice of sourdough or half a cup of cooked rice for some extra complex carbs.

Ingredients
  

  • 300 g chicken breast sliced
  • 1 tbsp ground cumin
  • 1 tbsp sweet paprika
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 2 tbsp olive oil mild, extra virgin
  • 1 cup red cabbage finely sliced
  • 1 cucumber diced
  • 1 carrot grated
  • 1 red capsicum diced
  • 1 tbsp natural yoghurt
  • 2 tbsp apple cider vinegar
  • 1 tsp sea salt
  • 1 tbsp sesame seeds
  • 1 tbsp mint leaves finely chopped, to garnish (optional)
  • 1 tbsp coriander finely chopped, to garnish (optional)

Instructions
 

  • Cover sliced chicken breasts with spice blend of cumin, paprika, onion & garlic powder – add little olive oil, if needed.
  • In a medium pan, add remaining olive oil and then pan fry chicken breasts.
  • Cook both sides, until chicken is cooked through. Set aside.
  • To make your rainbow slaw, in a large bowl, combine your cabbage, cucumber, carrot and capsicum together.
  • Drizzle your slaw with 1 tsp olive oil, yoghurt and a generous dash of apple cider vinegar.
  • Top with sesame seeds and fresh mint & coriander (optional).
  • Split between two plates. Top with grilled chicken. Season with salt and pepper.
  • Serve with a slice of sourdough or half a cup of cooked rice to add some more complex carbs.

Notes

This recipe is lighter on complex carbs, so feel free to add a slice of sourdough or half a cup of cooked rice to bulk it up if you need the extra nutrition.

TIME SAVER TIP
If you are pressed for time buy your pre-cut coleslaw mix from Coles Or Woolworths. We tend to steer clear of their pre-made dressings and instead use one of our own (as per our recipes).
In place of the spice mixture, we recommend Mingle Seasoning Mexican Blend for a pre-made spice blends (without the nasties!).
These are both excellent options when busy.
