Mexican Rice & Beans

We love to make our rice with Asian flavours, but this is a delicious side dish (or main with the right tweaks) based on some amazing Mexican flavours – lime juice, white pepper, paprika…. definitely a few of our favourite things! It is great as a vegetarian dish or can be served with marinated meat and a side of guacamole. Ingredients
  

  • 2-3 cups cooked rice*
  • 1 diced onion
  • 1-2 finely diced cloves garlic
  • 1-2 tsp ground cumin
  • 1-2 tsp paprika
  • 1-2 chopped tomatoes
  • 2 tbsp tomato paste/ puree
  • 2 tbsp lime juice
  • 1 tin legumes (lentils, black beans, chick peas etc)
  • sea salt & white pepper to taste

Instructions
 

  • In a medium heated pan, fry onion & garlic for 2-3 mins or until softened. Add in spices and stir til fragrant
  • Add chopped tomato and tomato paste, and stir fry a little longer
  • Add the cooked rice to the onion mixture and combine the flavours well
  • Then you can add in your tin of legumes and warm through
  • To serve, add a big handful of fresh coriander and fresh chilli (for the big people!).
  • Serve with meat (chicken, beef, pork or lamb) and some avocado with fresh lime juice (or a home made guacamole!).

Notes

If you liked this one, you should also try our Turmeric Roasted Cauliflower and our Sweet potato Nachos. *Brown rice is the most nutritious, however if your little people are not big fans of brown rice – maybe ease them into it with 3/4 basmati and 1/4 brown – gradually increasing proportion of brown rice over time. It is just different, so give them time to adjust. Nutrition-wise, it is worth persisting.
