Naked chicken Burrito
This super simple, but oh-so-delicious, one pan family meal is just waiting for you to make it! If you love the idea of a Mexican inspired dinner, this Naked Chicken Burrito hits the spot with all the Mexi flavoured favourites.
Ingredients
- 750 g chicken breast diced
- 400 g red kidney beans or black beans
- 2 capsicum sliced, red and green
- 1 onion finely diced
- 2 cloves garlic minced
- 2 tbsp mexican seasoning we love @mingle
- 1/2 cup cheese grated (optional if you wanted to avoid dairy)
- 2.5 cup rice cooked according to instructions
- 2 avocado mashed with lemon juice
Instructions
- If not done so already, cook your rice according to packet instructions. You will need 2.5 cups cooked rice for this recipe and you can freeze the rest.
- Start by pan frying up your onion and garlic, then add diced chicken.
- Add healthy dose of Mexican seasoning and stir to combine.
- Add sliced capsicum and mix together, Then pop lid on the pan and allow chicken top cook through and capsicum to soften.
- Once chicken is cooked through – cover mixture with your grated cheese and then pop the lid back on, until cheese has melted and you are left with a delicious pan of yumminess!
- Serve with any or all of side of corn chips, or 1/2 cup cooked rice per person, big scoop of guacamole, natural yoghurt, jalapeños, coleslaw – options are endless!
- We always try and make extra of the chicken mixture and this makes delicious leftovers for lunch the following day.
Notes
STORAGE
You can keep the chicken mixture in the fridge for up to 5 days (great as leftovers). This can also be frozen for up to 3 months.
SUBS
You can use black beans instead of red kidney beans. You could also sub chicken with an other source of protein to cater for what you might have on hand or your personal preference. Minced beef or steak is yum.
