Having a go to non starchy salad is a winner! The perfect side accompaniment for all of your lunches and dinners.

Ingredients
  

  • 300 g mixed fresh greens
  • 250 g cherry tomatoes sliced in halves
  • 2 Lebanese cucumber sliced in halves lengthways and then diced
  • 1 small red onion finely diced
  • 350 g slaw kit brand: Coles or Woolworths
  • 1/2 cup dill chopped
  • 1/2 cup coriander chopped
  • 2 tbsp light salad dressing of choice or see 'sides' for options

Instructions
 

  • Using a large salad bowl, layer all the ingredients in there and combine loosely together.
  • Dress with a light salad dressing of choice and mix through – our preference is that you do not use the dressing provided in the slaw kit.

Notes

Having this salad done up in the fridge as part of food prep is a great idea – just save the dressing for when you are about to eat it.
Soft fresh herbs work well here – however we love a combo of dill, coriander and parsley.
A dressing is also delicious to add here, so head to the ‘sides’ section and use one of our, OR use a low fat praise balsamic.
