One Pan Fish w Olives and greens
Ingredients
- 300 g rice rinsed
- 2 tbsp pesto
- 2 tbsp olive oil
- 750 g barramundi fillets, halved
- 2 cup vegetable stock
- 2 zucchini 250g zucchini, sliced into coins (round)
- 1 cup green peas
- 1/2 cup pitted kalamata olives
- 2 tbsp fresh parsley chopped
- 1 tbsp dill chopped
- 2 tbsp lemon juice
- 1 lemon sliced, to serve
- sea salt & pepper
Instructions
- Add basmati rice and 2 tbsp pesto to a large heavy based pan and stir to mix.
- Pour over stock and mix, cover and place on heat to bring to a boil.
- Once boiling, press the fish fillets down into the rice and then spread the zucchini and green peas around the pan.
- Sprinkle the kalamata olives around the pan, then cover and cook for another 10 minutes.
- Remove lid and if the liquid has not all been absorbed then cook another 2-3 minutes, until liquid is absorbed.
- Dollop remaining pesto on top of the fish, sprinkle fresh herbs into the pan, season with salt and black pepper and tuck in.
Notes
SUBS
You can use any firm white flesh fish or salmon would be a yummy sub too.
If you prefer to mix it up, or you are not fussed on fish, chicken could be subbed in too.
Best made fresh, although leftovers could make a yummy lunch the following day.
