Oven baked chicken and pesto rice
Oven Baked Chicken + Pesto Rice
This quantity below feeds a family of 4 (even 5) and is an absolute favourite. It has even gone viral on our socials!
Ingredients
- 500 gram chicken breast diced
- 1 cup white rice rinsed
- 2 tbsp basil pesto store bought or our SSH pesto in 'sides' collection
- 2 tbsp natural yoghurt
- 1.5 cups chicken stock
- 1 cup frozen green peas
- 1 punnet cherry tomatoes
- 1 cup cheddar cheese grated
- feta cheese optional
- sea salt & pepper to taste
Instructions
- Pre heat oven to 180 degrees.
- In an ovenproof dish, add the rinsed rice and diced chicken breast.
- Dollop 2 heaped tablespoons of fresh basil pesto and two tbsp of natural yoghurt.
- Cover with 1 1/2 cups chicken stock. Stir through and ensure all is well combined.
- Add 1 cup frozen green peas and 1 cup (or punnet) of cherry tomatoes. Press down into wet mixture.
- You could also add some crumbled feta at this point, this is optional, but recommended.
- Cover the top with 1 cup grated cheese.
- And pop into oven. Bake for 40-45 minutes or until both rice and chicken are cooked through.
