Peanut Butter, Tahini & Chickpea Cookies
This may sound a little like a strange hummus bowl situation… in a cookie?!? But we promise you, it is not! It is a delicious sweet, salty snack that the whole family will love, that's full of fibre and protein – just don't tell them what's in it or that its good for them ?
Ingredients
- 400 g tin chickpeas drained and rinsed
- 1/4 cup peanut butter 100%
- 2 tbsp tahini
- 2 tbsp coconut flour
- 1/4 cup maple syrup
- 2 tbsp coconut oil
- 1 tsp baking powder
- 1 tsp vanilla
- 1/4 cup cacao nibs or dark chocolate, chopped
Instructions
- Preheat oven to 180 degrees. Line a baking tray with baking paper.
- Place all ingredients, except cacao nibs, in a food processor and blitz well.
- Ensure mixture is well combined and is pretty smooth, although you still want it quite thick in consistency.
- Remove from the food processor and stir through the cacao nibs.
- Using a spoon, scoop out the dough and place onto baking tray.
- Press down gently with the back of a fork to flatten slightly. Repeat until you have used up all of the dough.
- Place the baking tray in the pre-heated oven and bake for 35 mins or until the edges of the cookies look darker.
- Once cooked, remove from the oven and let them cool.
- Once cooled, drizzle with a little peanut butter or melted dark chocolate.
- And there you go! A delish, nutritious, sweet snack for you and your bubs.

SUBS
If you wanted to make this one lunch-box ready, you can sub out the Peanut Butter for extra tahini. This creates a slightly different taste so you may want to add a little more sweetener (like 1 tbsp extra maple syrup).
