“Pimped Up” Guacamole

“Pimped up” Guacamole
Guacamole is a regular in our households – we serve with dinner, on a lunchtime wrap or just as a snack with chips.
Ingredients
- 1 avocado large
- Juice of one lemon
- 1 zucchini medium
- 1/2 cup baby spinach
- 2 tbsp natural yoghurt optional
- Sea salt and ground white pepper
Instructions
- Combine all ingredients in a food processor and pulse to your desired consistency. We don’t like a super-smooth guac, but prefer it a little chunky. But, this is totally up to you!
- To serve, add some fresh coriander leaves (optional) and serve with crudités or plain corn chips as a dip. We also dollop it onto our salads, or even use as an added 'extra' in our taco bowl, sweet potato nachos or Spicy Mexican Bean & Veg.
Notes
SSH Tip: you can also pimp it up with green peas. Gently steam 1/2 frozen peas and mix through the dip as per the above. Experiment! That’s what it is all about. Enjoy! Let us know below what you think?
