Slow Cook Beef Casserole
If you are not yet a fan of the slow cooker – what are you even doing beautiful?!? It is a life changer in the kitchen particularly if you are not a confident cook! It is impossible to stuff up and the more you neglect it generally the better the end product. We'll do at least one meal in the slow cooker every week, just because it is such an easy set and forget.
Ingredients
- 800 g chuck beef
- 3 carrots roughly chopped
- 3 celery stalks chopped
- 1/2 leek finely sliced
- 1 cup potato diced
- 2 tin tomatoes diced
- 2 tbsp tomato paste
- 1 tbsp mixed herbs dried
- 1 tbsp worcestershire sauce
- 1 tbsp bone broth optional, we like @gevity
- 1/2 – 1 cup water
Instructions
- Pop all of the ingredients in the slow cooker.
- If you can cook for 7hrs+, you can use LOW setting. If you are more like 6 hrs, aim for HIGH setting. Either way, would like at least 6 hours and then, just let the slow cooker do it's work.
- We served it with mashed potato and greens but you could also serve it with roast potato rice or pasta and some delicious greens on the side.
