Tuna ‘Sushi’ Salad Bowl

This tuna "sushi" bowl is a delicious take on a deconstructed sushi roll. Enjoy the taste sensation of this 'sushi' at home recipe – The salad has all of the flavors of sushi, but in an easy rice bowl form.
We love this salad because you don’t have to mess with rolling sushi, you throw everything in a bowl and you are good to go. The salad has rice, nori, cucumber, cabbage, avocado, edamame, capsicum, and sesame seeds.
The salad is finished off with a light dressing that is made of wasabi, ginger, and soy sauce. You get all of the sushi flavours, but in salad form. Win, Win!

Ingredients
  

  • 150 g tin tuna tinned, drained
  • 1/4 avocado diced
  • 1/2 cucumber diced
  • 1/4 cup red cabbage finely sliced
  • 1/2 red capsicum sliced
  • 1/3 cup rice cooked
  • 1/4 cup edamame beans
  • 1 tbsp pickled ginger optional
  • 1 nori sheets shredded

DRESSING

  • 1 tbsp soy sauce tamari for gluten free
  • 1/2 tsp tahini
  • 1/4 tsp wasabi optional
  • 1/2 tbsp lime juice
  • 1/2 tbsp mirin optional
  • 1/2 tbsp sesame seeds

Instructions
 

  • If not yet pre-cooked, cook 1 cup of rinsed rice according to packet instructions. You will need 1/3 cup of cooked rice per 1 serve and you can freeze the rest.
  • Put the dressing ingredients together in an empty jar and shake well to combine. Set aside.
  • In a large mixing bowl, add the cooked rice, tuna and all remaining salad ingredients (except nori sheets) together and then drizzle with the dressing.
  • Combine well, pop in to your serving bowl, top with shredded nori sheets and enjoy!

Notes

SUBS
You can use poached chicken or salmon, instead of tuna using our protein conversation chart in resource section.
You could also use dulse flakes instead of nori, if you didn’t have or leave them out altogether (although it’s not really ‘sushi’ salad then 😉 but would still taste amazing.
