Teriyaki Salmon Bowl
This is my homemade spin on a Poke bowl. It’s easy to assemble, macro-balanced to keep you fuelled for longer and really darn tasty.
Ingredients
- 75 g hot smoked salmon brand: Coles or Woolworths
- 1/3 cup rice pre-cooked as per pack instructions
- 150 grams slaw kit Coles/Woolworths pre-pack slaw mix
- 1/2 cup mixed fresh greens
- 1/2 cucumber diced
- 1 tsp whole egg mayo
- 1 tsp teriyaki sauce brand: Ayam
- 1/2 tsp sesame oil
- 1 lime juiced
- 1 tbsp sesame seeds
- 1 tbsp mint leaves finely chopped
- 1 tbsp coriander finely chopped
Instructions
- If you have your rice pre-cooked, you are ready to assemble your bowl. Otherwise cook your rice according to packet instructions and use 1/3 cup cooked rice this recipe. Freeze the rest or use tomorrow.
- In a bowl, add your rice, mixed greens, cucumber and slaw mix first, then crumble over your hot smoked salmon. Combine mayo, teriyaki and sesame oil and drizzle over your salad.
- Lastly add your fresh herbs and sesame seeds, squeeze over your lime and season with salt and pepper. Enjoy!

PREP
As mentioned with the Macro bowl, food prep is key for these. Pre-making a slaw mix to get your through a few days is a great idea. Pre-cooking your rice is also the go. If you want to aim for 4 lunches of macro bowls, you’ll need to buy 2 x serves of the 150 gram Coles hot smoked salmon.
If you don’t buy the pre made slaw mix – you can make your own – use grated carrot, sliced cabbage and red capsicum.
