Toasted Granola

Everyone LOVES a good Breakfast Granola, but we don't so much love the nasties that are normally part of the package… vegetable oils, dried fruit etc. This one is super yummy as it’s full of coconut, pumpkin seeds, almonds and sunflower seeds! Yum! We actually made this big batch for a brunch we hosted and everyone went crazy for it….

Ingredients
  

  • 400 g oats
  • 1/4 cup almonds chopped
  • 1/2 cup shredded coconut
  • 1/4 cup sunflower seeds
  • 1/4 cup puffed rice or buckwheat, quinoa, amaranth
  • 1/4 tsp sea salt
  • 2 tsp cinnamon
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup or rice malt syrup/ pure honey
  • 1 tbsp pure vanilla
  • 1 scoop SSH vanilla protein powder

Instructions
 

  • Preheat oven to 160 degrees.
  • In a large mixing bowl combine the oats, almonds, seeds, puffed grains, cinnamon and salt.
  • Stir together until evenly mixed.
  • In a small bowl combine the coconut oil, maple syrup and vanilla.
  • Using a wooden spoon slowly drizzle the liquid mixture over the oats mixture, stirring as you go. Try to coat all ingredients as evenly as possible with the liquid.
  • Once thoroughly mixed, pour on to a large, wide baking tray.
  • Cook at 160 degrees for 15 minutes, removing the tray at each 5 minutes interval to stir and ensure the mix cooks evenly.
  • After 15 minutes stir in the coconut and toast for a further 5 minutes in the oven.
  • Check your mix to make sure it’s no longer sticky and all ingredients have toasted and dried.
  • Allow to cool in the tray, then transfer to an airtight container.
  • Yum!

Notes

TO SERVE
To make sure that we are still hitting our protein targets, we serve this with a berry chia pudding or chia cup or alternatively with natural greek yoghurt, flavoured with some protein powder. 
This granola provides a delicious crunch – so use it to top anything when you need a little texture. But a little goes a long way, this is not created to be consumed by the plate full, rather a crunchy topper to some delicious protein rich base.
