Tuna & White Bean Patties w Crunchy Green Salad
These patties are simple to make and great to eat. Kids will never know that they contain super healthy, high fibre cannellini beans instead of the usual mashed potato base – even fussy eaters will be fooled. High in protein and fibre – a big win. These can be made gluten free too, with your choice of breadcrumbs.
Ingredients
- 400 grams tin tuna tinned, drained
- 400 g cannellini beans tinned, rinsed and mashed
- 1 carrot grated
- 1 zucchini grated
- 1 eggs
- 2 tbsp breadcrumbs of choice, or almond meal (extra for dusting patties prior to cooking)
- sea salt & pepper to season
- 1 tbsp olive oil or butter or coconut oil, to pan fry patties
Crunchy Green Salad
- 1 packet mixed fresh greens baby spinach, rocket, mesculin
- 1 red capsicum diced
- 1 carrot diced
- 1 lebanese cucumber diced
- 1/2 avocado diced
- 1/3 cup feta cheese crumbled
- 2 tbsp light salad dressing of choice (or see 'sides' recipes and make your own dressing)
Instructions
- Add the cannellini beans to a large mixing bowl and mash roughly with a fork.
- Combine all other additional tuna pattie ingredients (except the breadcrumbs) and mix to combine.
- Add 1 tbsp of breadcrumbs (or gluten free alternative) and mix well – you want a consistency that will stick together when pressed. If too wet, add a little more breadcrumbs, until mixture holds.
- Scoop one tablespoon at a time, form a ball in your palm, then flatten into a burger pattie shape.
- Tap both sides in breadcrumbs and set aside on a plate.
- Continue until all of the mixture has been made into patties.
- Makes 10-12 patties, depending on size.
- Warm fry pan to medium heat, add a little olive oil.
- Cook in batches – panfry each side for 3-4 mins. Alternatively, you can quickly pan fry each side (1 min each side), then pop into a pre heated 180 degree oven, for 5-8 mins to cook through. Continue til all of the patties are cooked. Set aside.
- Combine all salad ingredients, dress with light salad dressing, apple cider vinegar or lemon juice.
- Serve patties with crunchy salad and enjoy!
Notes
PREP
This mixture can be made ahead and kept in fridge.
Patties can also be cooked ahead of time and kept in fridge for up to 3 days or kept in freezer for 1-3 months. Allow to defrost and reheat in a low oven.
You can double the batch here and keep extras for your lunch (storage as above).
These can be a great addition to a school lunch box, too!
