Veggie Loaded Muesli Slice
This is one of our go-to sneaky hidden veggie recipes – for adults and kids alike!
Ingredients
- 1 banana mashed
- 2 egg
- 1/3 cup coconut oil melted
- 2 scoop SSH vanilla protein powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1.5 cup oats
- 1 cup shredded coconut
- 1/2 cup nuts chopped
- 1 tbsp chia
- 1 carrot grated
- 1 zucchini grated
- Opt: nuts extra sweetener (honey/ maple, rice malt)
- 3/4 cup Coconut Oil melted
Instructions
- Pre-heat the oven to 150 degrees celsius.
- Add all ingredients into mixing bowl and get your hands dirty!
- Combine well using hands so that all ingredients bind
- Press mixture into a lined slice tin
- Slow bake for 20-30 minutes (you what all veggies to cook).
- When it’s ready it should be brown on top and firm to touch.
- Let it cool then remove from the tin. Slice and enjoy!

SUBS
To keep this nut-free for a lunchbox item, sub the mixed nuts with some mixed seeds instead (try sesame, sunflower, pumpkin seeds).
STORAGE
Will keep in the fridge for a few days or freezer for a few months!
