Warming Quinoa ‘Porridge’

Ingredients

1 cup rinsed, uncooked quinoa
1.5 cup milk of choice (coconut is delicious here!)
1 cup water
1 tsp cinnamon
1 tsp vanilla powder (extract, bean paste)
1 tbsp rice malt syrup (or honey, maple syrup)
2 tbsp almond meal (opt)

Fruit to serve (fresh/ frozen or poached)

Method

  1. Place water and half of milk, cinnamon, vanilla, in a small saucepan and bring to a simmer for flavours to infuse.
  2. Add rinsed quinoa. Simmer for 12-15 minutes until liquid is absorbed.
  3. Add remaining coconut milk. Cook stirring, until almost all absorbed.
  4. Add rice malt syrup and almond meal. Stir through.
  5. Serve with fruit (we used Poached pears!).
