Add the cannellini beans to a large mixing bowl and mash roughly with a fork.
Combine all other additional tuna pattie ingredients (except the breadcrumbs) and mix to combine.
Add 1 tbsp of breadcrumbs (or gluten free alternative) and mix well - you want a consistency that will stick together when pressed. If too wet, add a little more breadcrumbs, until mixture holds.
Scoop one tablespoon at a time, form a ball in your palm, then flatten into a burger pattie shape.
Tap both sides in breadcrumbs and set aside on a plate.
Continue until all of the mixture has been made into patties.
Makes 10-12 patties, depending on size.
Warm fry pan to medium heat, add a little olive oil.
Cook in batches - panfry each side for 3-4 mins. Alternatively, you can quickly pan fry each side (1 min each side), then pop into a pre heated 180 degree oven, for 5-8 mins to cook through. Continue til all of the patties are cooked. Set aside.
Combine all salad ingredients, dress with light salad dressing, apple cider vinegar or lemon juice.
Serve patties with crunchy salad and enjoy!
