
Silken cacao chia pudding

Ingredients
- 500 g silken tofu drained if needed
- 1 cup soy milk or milk of choice
- 3 tablespoons honey or pure maple syrup to keep this vegan
- 3 tablespoons unsweetened cacao
- 1 teaspoon vanilla extract optional
- 8 tablespoons chia seeds
- 2 scoops protein powder, optional but will greatly increase protein content.
- 4 tbsp natural greek yoghurt
- grated chocolate for garnish
Instructions
- In a blender, combine the tofu, honey, cacao and vanilla. If using protein powder, add it here. Run the blender on high speed just until the ingredients are incorporated.
- In a small bowl, pour the contents of the blender and add the chia seeds. Stir to combine.
- Pour the pudding into serving dishes, cover with plastic wrap and refrigerate for at least one hour. Before serving, top with a dollop of natural greek yoghurt and then garnish with some grated dark chocolate, berries of choice, mixed roasted nuts / seeds / toasted coconut or homemade granola from some crunch.!
